This super creamy vegan mayo only uses 3 simple ingredients and no oil!

It’s so easy to make and is ready to use in minutes.

It is one of my favorite vegan mayo recipes to make as it can be used in potato salad, mixed through pasta, as a coleslaw dressing, on sandwiches, or anywhere else where you normally like to use mayo.

Let’s get into the recipe for 3 Ingredient Vegan Mayo! Enjoy…

Ingredients:

2 small boiled potatoes
1/4 cup unsweetened plant milk, I used almond (use more or less to get the consistency you like)
2 tsp dijon mustard (or milk American mustard is good too)

Directions:

Place all ingredients in a small blender and run for 1 to 2 minutes until everything is smooth and creamy.

If you need to thin your mayo out, then add splashes of plant milk as needed.
