This delicious tofu potato scramble is made in the air fryer.

It is a simple set and forget dish that you can prepare the night before or mix up in the morning for a quick hot breakfast!

I love to have this on toast and then top it with some avocado and a sprinkling of hemp seeds and fresh herbs. YUM!

Ingredients:

SERVES 1

150g silken tofu (or firmness of your choice)
100g peeled and grated potato
1 tbsp nutritional yeast flakes
1/4 tsp garlic powder
1/4 tsp chilli flakes, optional
1/2 tsp smoked paprika
1 tsp dried italian herbs
salt and pepper to taste

Directions:

Mash the tofu up with a fork or potato masher.

Place everything in the insert pan of your air fryer (or an oven proof dish that fits in your air fryer).

Give everything a good stir through and cook for 10 to 12 minutes at 180C/360F.

NOTE: you can add in any extras that you like prior to cooking. eg. mushrooms, canned beans, spinach.
