This apple mint salad is a stunning side dish for when you have guests over, or if you want to make a salad that will impress. Who said salads have to be boring, right? This would be great served alongside my mini stuffed seitan roasts. I normally don’t like sweet and savory foods combined, but when I created this I even surprised myself!

Ingredients:

4 large handfuls of greens (you can use any greens that you like eg. spinach, kale, mixed baby greens etc)
1 green apple, sliced into round disks (seeds removed)
handful of cherries
handful of blanched almonds (or nuts/seeds of choice)
10 mint leaves

DRESSING:
1 tbsp maple syrup
1 tsp lemon juice
2 tsp almond butter

Directions:

Place greens onto a flat plate or platter.
Put apple slices over the top (be sure to feature the “star” shapes of the apple – see video for full instructions)
Place almonds and cherries over the top – you could also use grapes or cranberries instead.

Whisk together all dressing ingredients and drizzle over the top of the apple mint salad. Serve and enjoy.
