This tasty curried cauliflower rice is so easy to make at home!

Packed full of yummy healthy plant based ingredients, this is a great dish to have if you’re trying to lose weight or if you follow a keto way of eating.

In fact, it’s just straight up delicious for EVERYONE!

Curried Cauliflower Rice – You Won’t Believe It’s Not Rice! Quick Vegan No Oil Recipe!

Ingredients:

SERVES 2

350g/12oz cauliflower (1 small head), pulsed in a food processor or chopped small
100g/3.5oz broccolini, cut small including stalks
100g/3.5oz mixed mushrooms, sliced
100g/3.5oz frozen peas
2 tsps curry powder
1/4 tsp garlic powder
salt and pepper to taste
1/2 cup vegetable broth, use only as needed in place of oil (see video above for instructions)

Directions:

Place, broccolini, mushrooms and peas in a non-stick pan over high heat. Stir and add splashes of vegetable broth as needed to prevent sticking.

Lower heat a little bit and add the curry and garlic powder. Again add splashes of vegetable broth as needed to prevent sticking and stir for a minute or two until the vegetables are softened.

Add cauliflower to the pan and stir through for a minute or two until cooked to your liking. Again as splashes of vegetable broth as needed.

Done. You are ready to eat!
