This zucchini flax batter is so easy to make and you can use it to make flat bread, pizza base or crackers, just by adjusting the amount of time you cook it for.

I actually cook this in the microwave in less than 10 minutes, but you can also bake it in the oven. I go through both cooking methods and instructions in the video for you.

Ingredients:

1 small to medium zucchini
1/4 cup chickpea flour (or brown rice flour, quinoa flour or flour of your choice)
1/4 cup flax seeds
1 tsp white miso paste (I use this instead of salt)
1/2 tsp garlic powder
1/4 tsp white pepper
1/2 tsp chilli flakes
1/4 cup water (more or less depending on your blender)

Directions:

Put all dry ingredients in a blender with enough water until you have a very thick batter consistency.

You could also grate the zucchini and then mix in a bowl until you have a thick batter.

Place on a plate lined with non stick parchment paper and spread out evenly with a silicone spatula (I use half of the batter and make 2 lots). You can also put it on an oven tray lined with non stick parchment paper if you prefer to bake it.

For microwave: Put on high for 4 minutes, then remove from parchment paper and flip over. Continue cooking 1 minute at a time until you reach your desired consistency.

For oven: Bake for 15 minutes and then flip… cook until you have reached your desired consistency.
