This high protein vegan pesto is so easy to make and really good for you.
You won’t believe that it has no nuts or oil in the recipe. It’s creamy and delicious mixed through pasta – or my favorite… mixed into mashed potatoes. YUM!
So easy to make… just throw everything in a food processor and it’s ready to use as a dip, spread or sauce. YUM!
Ingredients:
2 cloves garlic
1/2 cup basil leaves
1/4 cup hemp seeds
2 cups frozen peas, thawed
3 tbsps lemon juice
2 tbsps tahini
1/3 cup nutritional yeast flakes
salt and pepper to taste
splashes of vegetable stock or water to thin it out to your preferred consistency
Directions:
Place everything in a food processor and run for 1 to 2 minutes until everything is well combined and smooth.
Serve and enjoy!
