These vegan breakfast toasties are so easy to make and they taste delicious. Whether it’s for a quick breakfast on the run or for a fancy brunch with company, these toasties can be topped with anything you like. Quick, easy and absolutely mouth-watering… it doesn’t get much better than that!

Ingredients:


2 slices sourdough bread (or any bread you like)
4 tbsp hummus (check out my hummus recipe here if you want to make it yourself)
2 tsps white miso paste
Freshly cracked black pepper
Topping ideas: cherry tomatoes, watercress, avocado, olives, fresh herbs etc

Directions:

Spread miso paste on each slice of bread.

Top with hummus.

Place into oven for 20 minutes to crisp up and brown a little on top. Or cook in air fryer for 10-12 minutes on 180C/360F — until bread is crunchy and hummus is heated through to warm and creamy consistency.

Top with any extra topping that you like such as cherry tomatoes and watercress.

Add freshly cracked black pepper… and enjoy!
