10 minute Pizza
10 minute Pizza
Today I show you how to make a quick and easy pizza that tastes great. This is a fast way to have a hot lunch on the table in less than 15 minutes. Best of all, it is plant based vegan and is a great way to use up any leftovers you have in your fridge. Just use some pita bread or Lebanese bread as the base and you will be done in just minutes 🙂 My favorite is middle eastern pizza with hummus and falafels… but any toppings works fine.

  1. To begin this recipe you will need a pizza tray and a blender. Before you start, get the oven on at 180 C / 360 F.
  2. Place your Pita bread on the pizza tray and evenly cover with tomato paste. Then layer up your favourite pizza ingredients. I have shown a basic recipe based on what I had in the fridge. You can do the same. Left over dips, chutneys and spreads can add a great flavour so take a chance!
  3. When you have finished layering, finish the pizza off with a generous splashing of cheesy sauce before placing in the oven for 10 – 12 minutes.
Cheesy Sauce
  1. Add all the dry ingredients to your blender before the hot water. Start with a 1/4 cup of water and only add more if you like a runnier sauce. The less water you use the thicker the ” melted cheese” will be.
  2. If you are using a blender with a removable lid remember to vent it a little or you will likely end up with a sauce covered kitchen!
  3. Blend the sauce until nice and smooth and make sure to scrape off any stubborn bits of tapioca stuck to the sides of the blender.
