These apple strudel rice paper rolls are perfect served with creamy vanilla sauce and they make for a simple and delicious dessert that looks great too! It’s my dad’s birthday today so I am making these instead of a cake… yum, my taste buds are enjoying the party!
Apple Strudel Rice Paper Rolls with Creamy Vanilla Sauce
Ingredients
- Apple Strudel Ingredients
- 3 small Apples peeled, cored ad thinly sliced (approximately 500g/15oz)
- 1 1/2 tbs Lemon Juice (juice of 1 small lemon)
- 1/4 cup mixed dried fruit you can use any you like
- 2-3 tbs Coconut Sugar
- 1 tsp Cinnamon
- 1/4 cup almond meal or instant rolled oats
- 1 packet rice paper sheets
- Vanilla Sauce Ingredients
- 3 cups Non-Dairy Milk (eg almond, soy, rice, oat)
- 1 tbs Vanilla Extract
- 3 tbs cornstarch or arrowroot (use more cornstarch if you want the sauce thicker)
- 1/8 tsp Tumeric (to make the sauce more yellow)
- 1 tbs white sugar (optional)

- Mix all of the ingredients for the strudel mixture (except the rice paper) and put in a pot or pan. Cook over medium heat for about 5 minutes until slightly softened and caramelized. Remove from heat and set aside to cool in the refrigerator.
- Place all of the vanilla sauce ingredients in a pot and heat over medium for about 5 to 10 minutes, stirring constantly until slightly thickened. If you want a thicker custard like consistency, just add more cornstarch during the cooking process. Remove from heat and serve hot or let cold.
- Soak rice paper sheet in water for about 30 seconds until soft and pliable. Place on a damp tea towel to make it easier to work with. Spoon a tablespoon full of mixture onto the bottom third of the rice paper. Fold in the sides slightly, then roll up from the bottom like a spring roll.
- Place all completed rolls onto some parchment paper to avoid them sticking together (see video for details).
- Serve the apple strudel rolls in a bowl full of vanilla sauce or top with vanilla sauce. YUM!
Recipe Notes
Sprinkle with cinnamon, dried fruit or some maple syrup for some extra zip!!!
