Hollow out the eggplant as shown in the video demo above.
Stuff with one serve of my No Cook Stuffing as per description at top of page.
Place on non-stick parchment paper in an oven proof dish and bake for 30 to 40 minutes until cooked through and soft.
NOTE: Do not over cook and be careful when removing from the baking dish. Allow it to cool a little so that it stays nice and firm and is easy to carve.

Any left over filling can be used to stuff mushrooms or bell peppers. YUM!
