Festive Stuffed Eggplant

4Serves 10minutes 30-40minutes
  1. Preheat oven to 200C/400F.
  2. Hollow out the eggplant as shown in the video demo above.
  3. Stuff with one serve of my No Cook Stuffing as per description at top of page.
  4. Place on non-stick parchment paper in an oven proof dish and bake for 30 to 40 minutes until cooked through and soft.
  5. NOTE: Do not over cook and be careful when removing from the baking dish. Allow it to cool a little so that it stays nice and firm and is easy to carve.
Recipe Notes

Any left over filling can be used to stuff mushrooms or bell peppers. YUM!
