My Favorite Plant Based Lentil Breakfast Dish - Lentil Bruschetta
Ingredients
- 1 slice Bread I used sprouted spelt bread
- Lentil Bruschetta Topping
- 1/3 cup Brown Lentils drained and rinsed
- 1 handful Cherry Tomatoes cut in quarters
- 1 tbsp Red Onion diced finely
- 2 tbsp Avocado chopped
- 1 tbsp Basil chopped
- 1 whole Garlic clove peeled and crushed
- 1 tbsp Balsamic Vinegar
- Salt and Pepper to taste
Servings: serve

Instructions
- Get fresh bread slice or toast it first if preferred.
- Mix remaining ingredients in a bowl and stir through gently until well combined.
- Serve the lentil bruschetta mixture either on top of the bread or along side. YUM!
