Caramel Coconut Baked Vegan Donuts

Indulge your taste buds with these tasty vegan caramel coconut donuts. This is a simple baked vegan donuts recipe that you can have on the table in under 20 minutes!

Donut Instructions
  1. Preheat oven to 180C/360F.
  2. Place all of the dry ingredients in a mixing bowl and stir together so that all of the ingredients are all very well combined.
  3. Add the wet ingredients and mix gently. A silicone spatula works well for this as it allows you to drag all of the flour off the sides of the bowl and into the batter. Do not over mix so that it stays nice and aerated – this will make the donuts nice and fluffy.
  4. Spoon the mixture into a donut tin and fill to about 3/4 full. See video for demonstration of this.
  5. Once all of the donut holes are filled, place in oven for 12 minutes.
  6. Once done, allow to cool for a couple of minutes before taking them out of the tray. Note: by running a silicone spatula around the edge, this will allow you to lift the donuts out easily.
  7. When ready, dip the top of the donut into the caramel sauce, then dip it into the shredded coconut. Enjoy ­čÖé
Caramel Topping Instructions
  1. Place the dates and water into a small blender and let them sit for a while to soften if you do not have super soft dates on hand. By using hot water it will also help to make this much smoother and creamier when blending.
  2. Add the lemon juice and salt and blend till smooth.
  3. Place in a small shallow bowl.
  4. Place coconut into another shallow bowl.
