This easy curried tofu scramble is a great vegan breakfast recipe that anyone can make. Simple ingredients and only takes minutes to cook up.
Curry Tofu Scramble
Ingredients
- 500 grams Tofu Soft, medium or firm is fine
- 2 tsp Granulated Garlic
- 2 tbsp Curry Powder
- 1/2 tsp Fresh Ginger, grated
- 1/4 cup Frozen Peas
- 1/4 cup Frozen Corn
- 1/4 tsp Chilli Flakes to taste
- 1/4 tsp Black Pepper to taste

- Firstly you will need a large frying pan. Crumble up the tofu into small pieces so it takes on the look of scrambled eggs
- Add all the other ingredients into the mix.
- Set your cooktop to high and place the fry pan on the heat.
- Put aside about half a cup of water next to the frypan in case you will need it should the tofu begins to stick to the pan.
- Stirring regularly, heat the scramble through and stir for about 5 minutes.
- Serve the scramble with a side of toast and garnish with fresh tomato, herbs (I like chives, fresh coriander) and even some fresh chilli if you like spice!

Loved the tofu scramble. I used the garlic and onion powder, left out the curry. It was so yummy with toast and jam.
