Curry Tofu Scramble
This easy curried tofu scramble is a great vegan breakfast recipe that anyone can make. Simple ingredients and only takes minutes to cook up.
Soft, medium or firm is fine
Fresh Ginger, grated
Firstly you will need a large frying pan. Crumble up the tofu into small pieces so it takes on the look of scrambled eggs
Add all the other ingredients into the mix.
Set your cooktop to high and place the fry pan on the heat.
Put aside about half a cup of water next to the frypan in case you will need it should the tofu begins to stick to the pan.
Stirring regularly, heat the scramble through and stir for about 5 minutes.
Serve the scramble with a side of toast and garnish with fresh tomato, herbs (I like chives, fresh coriander) and even some fresh chilli if you like spice!
