Today’s recipe is for lemon coconut vegan bliss balls. These taste so delicious and are super quick and easy to make.
They will be gobbled up faster than you know it… so you might want to make a double batch!
Lemon Coconut vegan Bliss Balls
Ingredients
- 2 tbs Lemon Juice
- 1 small Lemon zest only
- 2 tsp Vanilla Extract
- 15 pitted Dates
- 1/4 tsp coarse celtic sea salt
- 1/2 cup Desiccated Coconut
- extra Desiccated Coconut for coating outside
Servings: balls

Instructions
- Add all of the ingredients into a food processor and process until well combined. Scrape down any bits that have not been mixed through and pulse again.
- Remove blade from food processor and shape the mixture into small bite-size balls.
- Roll in coconut to coat the outside, or leave as if you prefer them uncoated.

I made these however I added sultanas and apricot jam, very yummy. Just about to make another batch with dried apricots. So easy to make as well.
It’s also great with an almond in the middle and the mixture put around the outside. Almost like a raffaelo.
