Add all of the marinade ingredients to a pot or pan and heat for a minute or two until the sugar has dissolved. Set aside to cool while you prepare the vegetables. (See video at top of this page for full demonstration).
Peel and cut your vegetables into bite size pieces to create a variety of textures. Place in a large salad or mixing bowl.
Pour the marinade over the vegetables and mix through until well combined.
Cover the vegetable mixture and set aside for at least to hours, but you can leave it for a few days of you want a stronger flavor.
