Mushroom Oatmeal Risotto
This mushroom oatmeal risotto is so rich and creamy. Best of all, it only takes minutes to make. Rather than stirring for an hour using traditional rice, this mushroom risotto is made with oatmeal. Not only is this a tasty dish, but it is full of cholesterol lowering goodness! Eating oats has never tasted so good…

1 – 2serves 5minutes 5minutes
  1. Put a non-stick pan on medium heat.
  2. Add mushrooms and dry fry for a few minutes until they soften and start to release their juices.
  3. Add the tamari and stir for a minute more.
  4. Add spices, herbs and oats and stir for another minute.
  5. Add chickpea flour and mix it through well.
  6. Lower the heat slightly if needed and begin to add the plant milk and extra water gradually and continue to stir until the mixture become thick and creamy. This should only take about 5 minutes.
  7. You are ready to serve and eat! YUM!
