Middle Eastern Oil Free Rice
This quick and easy middle eastern yellow rice recipe only takes 12 minutes to make if you use a microwave. You can also cook it on the stove top or in a rice cooker and it is a perfect meal for lunch, dinner or a snack 🙂 This is kid approved and my 12 year old loves it. He eats this with mushrooms and hummus. If you are starting out on a vegan or plant based lifestyle and don’t know what to make, then this is a super simple recipe to start with. It tastes great, look great and is so easy to make that if gives you no excuses to eat out or get takeaway 🙂

  1. For this recipe you will need a large bowl and a microwave. If you do not like microwaves you can always cook this rice on your stove or in a rice cooker.
  2. First pour the rice into your bowl and wash repeatedly until most of the starch is removed.
  3. Now pour the vegetable stock over the top and add the tumeric powder.
  4. Mix up the turmeric with the stock and then place the bowl in your microwave for approximately 12 minutes. My microwave is 1100W, so you may have to adjust your time if your microwave has more or less power.
  5. After 12 minutes all the stock should be absorbed into the rice leaving puffy grains. If it is not quite there try giving it a stir then let it sit for a few minutes.
  6. Serve and sprinkle with sumac, herbs and pinenuts.
