This quick and easy polenta slice is super fast to make – it tastes great and looks impressive! Great for a quick meal or when you have guests coming over. Each mouthful is a taste sensation and you won’t be able to stop at just one piece 🙂 ENJOY!
Potato & Vegetable Polenta Slice
Ingredients
- 1 cup Polenta
- 3 cups water
- 0.5 cups Nutritional Yeast
- 2 tsp Garlic Powder
- 2 tsp Celtic Sea Salt
- 1/2 tsp White Pepper
- 2 tbsp Tahini (or Hummus)
- 1 tbsp Mixed Herbs (I used dried basil and parsley)
- 1/4 tsp chili flakes (optional - to taste)
- 2 cups mixed steamed vegetables (chopped into thumb sized pieces)

Instructions
- First up you will need a large sauce pan and stirring spoon.
- Add all the ingredients (except the vegetables) to your sauce pan and apply medium heat while stirring briskly.
- Once the mixture reaches a high simmer, turn the heat down and keep stirring until you have a nice thick mash potato consistency and take off heat.
- Put vegetables into the base of your chosen dish/mould.
- Spoon the polenta mixture over the vegetables (or mix through). I put mine into a spring-form cake tin lined with nonstick parchment paper.
- Place in the fridge for approximately at least 10 minutes to set.

Hi, I made this recipe and I loved it. Then I was thinking, hmmm, potato and vegetable polenta? So I thought, darn, I forgot the potatoes, when was I supposed to add them? They aren’t in the recipe. I felt better because I thought I was going nuts, how could I have missed that ingredient? So can you please tell me how many I was supposed to add and what kind if any particular kind?
