Potato & Vegetable Polenta Slice
This is a quick and easy dish that you can make super fast – it tastes great and looks impressive! Great for a quick meal or when you have guests coming over. Each mouthful is a taste sensation and you won’t be able to stop at just one piece 🙂 ENJOY!

  1. First up you will need a large sauce pan and stirring spoon.
  2. Add all the ingredients (except the vegetables) to your sauce pan and apply medium heat while stirring briskly.
  3. Once the mixture reaches a high simmer, turn the heat down and keep stirring until you have a nice thick mash potato consistency and take off heat.
  4. Put vegetables into the base of your chosen dish/mould.
  5. Spoon the polenta mixture over the vegetables (or mix through). I put mine into a spring-form cake tin lined with nonstick parchment paper.
  6. Place in the fridge for approximately at least 10 minutes to set.
