Quinoa Potato Pizza

Crusty Pizza Base
  1. For this recipe you will need a large mixing bowl, spatula or wooden spoon, 2 pizza trays and some non stick baking paper.
  2. Add all the dry ingredients into the mixing bowl and mix them thoroughly
  3. Now add the mash potato and work it through the mixture before adding the starchy warm water.
  4. Mix the dough thoroughly by hand, then work into a large ball before covering the mixing bowl with a tea towel (or similar) for 20 minutes to allow the yeast to do it’s work!
  5. While the dough is proving get your oven heating up to 220°C / 430°F.
  6. Once the dough has proved you will see that it feels spongy and softer. Take out your two pizza trays and cover both with some grease proof paper. Divide the dough in half and work them into a pizza base shape on the grease proof paper.
  7. Pop both of your pizza bases into the oven for 10-20 minutes each side depending on how crispy you like your base
Cheesy Sauce
  1. Before commencing you will need a small blender and ideally a squeeze bottle to both store the sauce and make it easy to apply to the pizza.
  2. Simply pop all the ingredients into your blender and blend for approximately 1 minute or until smooth and creamy.
  3. Pour the mixture into your squeeze bottle through a strainer to catch any lumps the blender may have missed.

Once the bases are ready, top them with your favourite ingredients. You can see mine in the video above!
Once the pizza is cooked (mine took approximately 5 minutes) take it out and swirl some of the cheesy sauce over the pizza before serving. Yumbo Jumbo!!
