Smokey Potato Leek Soup
Ingredients

Instructions
  1. Have all of your vegetables washed, chopped and ready to go!
  2. Add leeks, onion and vegetable stock to a large pot and steam fry over medium-high heat for about 5 minutes until they start to soften and release their own juices.
  3. Add all remaining ingredients except for the Tamari and Liquid Smoke.
  4. Stir through, put lid on and simmer on low-medium for 30 to 45 minutes until the potatoes are soft.
  5. Add the Tamari and stir through.
  6. Remove pot from heat and blend with a hand blender until smooth and creamy. (You can also use a blender or food processor, blend in batches and return to pot0.
  7. Stir through the liquid smoke.
  8. Serve in bowls, topped with anything you like πŸ™‚ I have used parsley and cashew cream. YUM!

    Excellent flavor. Thank you Anja. I made it with parsley and dill as the herbs. My husband of Polish heritage so we have to have the dill! We didn’t care for the texture after it was blended so next time we’ll have it chunky style. Again, thanks for a quick and easy, but most importantly flavor packed soup!

    Thanks for this delicious recipe Anja! I recently came across your page and am so excited to finally find a vegan website that is also oil free! I have a lot of trouble with coming across vegan recipes that use large amounts of oil, too much to easily substitute. This soup was delicious, I made it for my family and got the tick of approval from both my parents and siblings! I am eager to try other recipes and already have a list lined up!     OMG, amazing recipe,
    I never used liquid smoke before and as I opened the bottle I almost fainted with memories from my childhood years, smoked pig, smoked cheese etc. I can’t decide which it is soo potent.
    I might try it with onlu 1 spoonful next time and see how I go. A real bit of chemistry there!
