Smokey Potato Leek Soup

Instructions
  1. Have all of your vegetables washed, chopped and ready to go!
  2. Add leeks, onion and vegetable stock to a large pot and steam fry over medium-high heat for about 5 minutes until they start to soften and release their own juices.
  3. Add all remaining ingredients except for the Tamari and Liquid Smoke.
  4. Stir through, put lid on and simmer on low-medium for 30 to 45 minutes until the potatoes are soft.
  5. Add the Tamari and stir through.
  6. Remove pot from heat and blend with a hand blender until smooth and creamy. (You can also use a blender or food processor, blend in batches and return to pot0.
  7. Stir through the liquid smoke.
  8. Serve in bowls, topped with anything you like πŸ™‚ I have used parsley and cashew cream. YUM!
