Instructions
Prepare the toppings
- Firstly you will need a medium sized saucepan, stirring spoon and small blender or grinder. You will also need several glasses or bowls to hold your custard servings.
- Before we make the custard it's best to prepare the toppings. Peel and chop your mango into a serving bowl.
- Next, put the pistachio nuts, cinnamon and coconut sugar in your blender/grinder and do a coarse chop leaving nut chunks in various sizes.
Make the custard
- Add all the custard ingredients into your saucepan cold and mix thoroughly
- Put the saucepan on a high heat and bring the mixture to the boil before dropping the temperature back to a simmer for 1-2 minutes
- Remove the saucepan from heat and ladle the custard into your choose of serving glasses until approximately 1/3 of the cup is full.
- Now layer the chopped mango, pistachio mix and custard until you are happy with the look!
- You can either serve now or add your touches like a scoop of vegan cream or ice-cream or perhaps a swirl of maple syrup on top for an extra sugar hit!
