This is a great main or side dish, and best of all it is made of just vegetables. But what about the rice, I hear you ask? Well, that is made from cauliflower. Yes, you read correctly… cauliflower rice!

A great asian fried “rice” that has no-oil and is packed full of vegetables – now that’s a whole food plant based winner.

Heart healthy and full of goodness… my belly is happy 🙂

Instructions
  1. In a food processor (or by hand if you wish) pulse up one head of cauliflower till it resembles rice grains.
  2. Put a non-stick fry pan or wok on high heat and add in the onion. Stir for about 1 minute until it becomes browned and fragrant.
  3. Add the carrot, beans and red pepper and stir for 2 minutes more. Add some of the stock as you need it to stop the ingredients from sticking to the pan and in place of oil.
  4. Now add the cabbage and the green onion and keep stirring and mix through.
  5. Add the tamari, coconut sugar to the pan and stir through. Then add cauliflower and mix thoroughly.
  6. Keep cooking and stirring for about 5 minutes or until the cauliflower is cooked to your liking (see the video for instructions).
  7. Squeeze fresh lemon juice over the top and add salt to taste. You are good to go!
