This is a great main or side dish, and best of all it is made of just vegetables. But what about the rice, I hear you ask? Well, that is made from cauliflower. Yes, you read correctly… cauliflower rice!
A great asian fried “rice” that has no-oil and is packed full of vegetables – now that’s a whole food plant based winner.

Stir Fried Asian Vegetable Cauliflower Rice
Ingredients
- 1/2 head Cauliflower Pulsed up in food processor or chopped really finely by hand
- 1/2 large Onion Sliced lengthways
- 1/2 large Carrot Grated
- 6 green Beans Finely sliced, on an angle
- 1/2 cup Red Pepper (Capsicum)
- 1/4 cup Green Onion / Shallots
- 1 1/2 cups Cabbage roughly chopped into small pieces
- 1 tsp Coconut Sugar
- 1 tbs Tamari or Braggs aminos / low salt soy sauce
- 1/2 to 1 cup Vegetable Stock
- 1/2 whole Lemon juiced over the top when done
- Ginger optional
- Chilli optional
- Salt to taste

Instructions
- In a food processor (or by hand if you wish) pulse up one head of cauliflower till it resembles rice grains.
- Put a non-stick fry pan or wok on high heat and add in the onion. Stir for about 1 minute until it becomes browned and fragrant.
- Add the carrot, beans and red pepper and stir for 2 minutes more. Add some of the stock as you need it to stop the ingredients from sticking to the pan and in place of oil.
- Now add the cabbage and the green onion and keep stirring and mix through.
- Add the tamari, coconut sugar to the pan and stir through. Then add cauliflower and mix thoroughly.
- Keep cooking and stirring for about 5 minutes or until the cauliflower is cooked to your liking (see the video for instructions).
- Squeeze fresh lemon juice over the top and add salt to taste. You are good to go!

Loving your You Tube channel. I am just recently making changes to mine and my families diet. I feel I can go fully vegan but my husband and 8 year old would struggle so for now they will have some meat 3-4 times per week and drink cows milk. I have been enjoying your recipes very much.
I definitely will try this I have been looking for a total rice replacement and this will definitely work.
