Tomato Onion Relish for your festive cooking!

This tomato onion relish is a perfect side for your festive meals. The flavors of this simple onion relish will create a party in your mouth. With a hint of curry and the blend of sweet and sour flavors… this tomato onion relish is simply – yum! Ideal to serve with nut loaves, tofu dishes, eggplant or simply as a filling for sandwiches.

At this time of the year most of us are planning Thanksgiving meals and all sorts of holiday cooking. With that in mind, we all need something quick and easy that’s packed full of flavor to serve alongside our main dishes.

Certainly, this tomato onion relish is one of those super tasty accompaniments that you will be making for years to come. It’s just so simple and adds a flavor boost to any dish you add it to.

Great served with my Hearty Mushroom Lentil Burgers.

Ingredients

Instructions
  1. Bring a fry-pan or small pot to medium-high heat. Add the tomatoes and onions and stir until they start to soften. Add a splash of water if you need to stop them sticking.
  2. Add the garlic, mustard seeds and curry powder and stir for another minute or so.
  3. Add the sugar (or raisins) and stir for about 30 seconds until it's well stirred through the mixture.
  4. Add the salt and apple cider vinegar and give everything a final stir through so that it is well combined.
  5. Turn the heat to low and let your mixture simmer for 20 minutes to half an hour until it is nice and soft and broken down into a delicious relish.
  6. Serve hot or cold and store in the fridge for up to a week in a container. Enjoy!
