For this recipe you could use a toasted sandwich maker or just a non-stick pan like me. If using a pan you might also want a nice heavy pot that you can use to compress the sandwich in the pan.
First, lay your slices of bread out on a board and place a layer of cheese slices on one piece followed by a layer of tomato slices. If using pepper, now is the time to spice up that tomato before adding another layer of cheese. Next, get your pan heating up to a low/medium heat.
Now top the sandwich off with the other slice and pop into your heated pan. Cook the sandwich for about 3 minutes compressing it every so often with your pot's base to get that "cheese" melting.
Flip your sandwich over in the pan and keep cooking until the cheese is melting and the bread is brown!
Now it's time to serve this delicious morsel up with your favorite condiments; mustard, sweet chili sauce, fruit chutney and hummus spring to mind... ENJOY!!!
