Vegan Smoked Cheese – Stretchy and Melted!

This melted vegan smoked cheese is just in time for Thanksgiving in Canada… however, it is great at any time of the year and I could just eat this EVERY SINGLE day!

It’s got a lovely smokey flavor and is great on pizza, in lasagna and in toasties.

It only takes a few minutes to make and tastes amazing. If you’re struggling to eat plant based or vegan food because you miss the taste of traditional melted dairy cheese, then you’ll love this mouth-watering alternative. Even kids love it!

Ingredients

Instructions
  1. Soak the cashews in the water for about 15 minutes to soften them.
  2. Add the cashews (including the soaking water) and all other ingredients into a small blender and blend until smooth and creamy.
  3. Bring a non stick frypan to medium heat and add the blended liquid.
  4. Stir constantly as the mixture will start to thicken very quickly. Keep stirring for a few minutes until thick and stretchy like melted cheese.
  5. Remove from heat and eat or use immediately in other recipes, or store it in the fridge for up to about 5 days and use as needed.
