This delicious Tofu Greek Salad with coconut tzatziki is super easy to make and packed with nutrient dense ingredients… plus it tastes amazing! I created this using the Mix and Match Meal Plan from my Meal Prep Made Easy Course.

This is a great meal you can use for weight loss, a light meal option or add some quinoa, sweet potatoes or rice to bulk it up into a heavier meal. YUM!

SERVES 2

Ingredients:

280g/10oz firm tofu, cubed
1 tsp cumin powder
1 medium cucumber, cut into large chunks
1 large tomato, cut into wedges
1/2 small red onion, sliced
2-3 tbsp olives, sliced in half
1 tsp dried oregano (or mixed italian herbs)
salt and pepper to taste
Lemon wedge to serve

TZATZIKI SAUCE
80g/3oz unsweetened coconut yoghurt
3-4 tbsp cucumber, seeds removed and finely diced
1-2 tsp dried dill
1 garlic clove, minced

Directions:

Pre-heat oven to 180C/360F and line a baking tray with baking paper. (Or use an air fryer).

Add tofu and cumin to a bowl and toss until well combined. Place on the lined tray and bake for 15 minutes, turning halfway.

Meanwhile, prepare Greek Salad. Add cucumber, tomato, onion, olives and oregano to a bowl and mix together. Divide equally between 2 containers if doing for meal prep (as shown in video above).

Prepare the coconut tzatziki by combining coconut yoghurt, cucumber, dill and garlic in a bowl. Season to taste.

Add cooked tofu to the Greek Salad.

TIP: Serve half for dinner tonight with half of the Tzatziki and refrigerate remaining portion for tomorrow’s leftovers.
