This vegan cashew cheese sauce recipe is so quick and easy to make… and it tastes so creamy and delicious. It’s perfect for plant based mac and “cheese”, or any other pasta or potato dish that needs a delicious vegan cashew cheese sauce. This also great as a dip with my easy flax seeds crackers.

Ingredients:

1 medium onion, roughly diced
1 stalk celery, sliced
1 cup cashews (or blanched almonds)
1/3 cup nutritional yeast flakes
dash white pepper
1 tsp dijon mustard
1/4 cup vegetable broth/stock
1/2 cup plant based milk (I used soy)

Directions:
Place onion and celery into a pan or pot that’s been preheated to medium-high heat.

Use splashes of water or vegetable broth to stop the mixture from sticking and to cook it through till soft and browned.

Place the cooked mixture in a blender with the remaining ingredients.

Blend for 1 or 2 minutes until smooth and creamy.

That’s it, you’re done! Serve with pasta, potatoes or as a tasty dip.
