Ingredients:

300g/10.5oz tofu (silken, medium or firm)
2 cups cooked macaroni (but you could use veges or another type of pasta instead)
4 cherry tomatoes, cut into quarters
1 tbsp spring onion, sliced
1/2 cup cashew cheese sauce

Directions:

Get a non-stick frypan and don’t put it on the heat yet. Place tofu in the pan and break it up into smaller pieces so it resembles scrambled egg consistency.

Place all over ingredients into the pan also.

Then turn the pan onto a medium to high heat and start to stir everything together. Keep stirring lightly until the mixture is heated through. This only takes a few minutes and then it’s ready to serve.
