This vegan spanish omelette is a budget friendly tasty meal that is quick and easy to make. Filled with comforting potatoes, this is perfect for a hearty breakfast. I also like to have this for lunch or dinner with a BIG salad. Ingredients:

1 cup chickpea flour
1/4 tsp white pepper
dash of chilli flakes
1/2 tsp smoked paprika
1 tsp onion granules (or pan fry a sliced onion)
1 tbsp nutritional yeast flakes
1 cup water
2 – 4 boiled potatoes (or baked potatoes)

Directions:

Mix all of the dry ingredients in a bowl. Add the water and stir until well combined and any lumps are gone.

Add in the cubes or sliced potatoes.

Pour the batter into a non stick fry-pan that’s been heated to a medium high heat. Cook for about 5 minutes on medium, then lower the heat to low and let cook until the top starts to firm up.

Place a large plate over the top of the pan and flip the Spanish omelette over onto the plate. Then slide it back in to the pan and continue cooking for a few more minutes until it is browned to your liking.

Serve your vegan spanish omelette with a big salad and your favorite dressing and condiments! YUM!
